I personally LOVE Sweet Potatoes and they are a staple in my household. On a Saturday or/and a Sunday morning I will cut up 2 or 3 sweet potatoes along with 3 or 4 Yukon potatoes and cut up a yellow onion, red, green and yellow bell pepper. Put some olive oil in the pan or a little canola oil and cook these vegetables all together, when brown and soft (which doesn’t take long), I personally top this hot dish with some butter, and dig in. Yum, Yum!!:)
